15 ripe tomatoes, peeled
4 medium green peppers
4 medium onions
2 stalks celery
1 1/3 cups cider vinegar
1 1/3 cups sugar
4 tsp salt
1/2 tsp pepper
1/2 tsp cloves
1/4 tsp cinnamon
Boil & Cook uncovered low heat 1 1/2 to 2 hours
-Followed by a canning process-
Green Tomato Bread
2 cups finely diced green tomatoes
2 cups white sugar
1 1/2 cups chopped walnuts
1 cup canola oil
1 tablespoon vanilla extract
1 teaspoon salt
3 cups all- purpose flour
1 tablespoon ground cinnamon
1 teaspoon baking soda
1/4 teaspoon baking powder
1. Preheat oven to 350 degrees. Grease and flour two 9x5 loaf pans
2. Mix tomatoes, sugar, walnuts, canola oil, eggs, vanilla and salt in a large bowl. Mix dry ingredients in a separate bowl; stir into egg mixture until just blended. Spoon batter into prepared loaf pans.
3. Bake for about an hour. Let cool in the pans for 10 minutes before transferring to a cooling rack.
Zucchini Crust Pizza
2 cups packed freshly shredded raw zucchini
1 large egg
1/4 cup freshly shredded Parmesan cheese
1/8 tsp black pepper
1/4 cup flour
Preheat oven to 450°F. Line a large baking sheet with parchment paper.
Squeeze water out of zucchini (should have about 1 cup of zucchini remaining)
Add zucchini, egg, cheese, pepper and flour to a large mixing bowl and combine.
Spread mixture onto baking sheet to form pizza shape.
Bake in oven about 15-20 minutes or until edges are golden brown. Flip over crust and bake an additional 10 minutes. Flip pizza crust back over.
Lower oven temperature to 400°F. Add whatever pizza ingredients you desire to your crust. Bake for about 8-10 minutes or until cheese is melted. Serve immediately. Yummy!
2 tsp Olive Oil
1 1/4 lbs unpeeled 1 inch pieces of eggplant
salt & pepper
2 garlic cloves crushed
2 tbsp chopped basil
1 1/2 cups breadcrumbs (Italian Seasoned)
1 egg beaten
2 ounces Pecorino Romano cheese grated
1 tbsp chopped parsley
Mozzarella cubed (optional stuffing)
Cook eggplant in olive oil and water S & P till tender
Place in food processor - pulse a few times
Add remaining ingredients
Form meatballs and bake at 350, 20 to 25 minutes
Stuff with cheese if you want !
